That's a broad question, because it depends entirely on your area of law! Wherever there are lawyers there are paralegals, so you could work in areas like commercial, corporate, family, real estate, litigation, or criminal law. Even then, in these specific areas, there are different types of cases. For example, I work in criminal law and so there are focuses like motor vehicle offenses, fraud, homicide, major gang violence, drugs, sexual assaults, intimate partner violence, trafficking, environmental offenses, etc.

I got the completely unrelated and useless (unless you pursue further education) degree of a BA in Psychology and Philosophy LOL. Things could be different in your country, but most paralegal programs are considered post-secondary education. So, you either go directly into them after high school, you enter one in addition to your other post-secondary education, or you work through a program while having a job.

If you want to get your foot in the door (and not just go directly into a program), you can always do legal assistant work first (I believe a high school degree is sufficient here)! Some places will even have programs that give you a scholarship to encourage you to become a paralegal while you're working there. Paralegal and legal assistant work are quite similar, except for the fact that paralegals have a certificate which gives them more "legal power", and so they usually work on more serious cases.
